make this a lot!

For those who visit my clinic you've probably had this with your cup of tea.
I love this a a special breakfast treat spread with nut butter or even cheekier, chocolate nut butter.

Oats are incredibly nutritious, rich in magnesium, zinc, and B vitamins (good for energy and the nervous system). They provide are a source of fibre, can assist in lowering blood pressure and cholesterol, and they can contribute to blood sugar balancing.

I've used a mix of oat flour, buckwheat, and ground pecans, but you could use any combination of flours and ground nuts, play around, even increasing the hemp powder content, as long as your dry ingredient adds up to 200g.

Play around with flavouring too, I quite often add, nutmeg, cloves, a touch of ground coriander.

120g oat flour
20g buckwheat flour
40g ground pecans
20g hemp protein powder
1 ½ tsp gluten free baking powder
1-2 tsp cinnamon
3 eggs beaten
3 bananas mashed
2 handfuls of rasisns
3tbs of seeds, (pumpkin, chia)
Chopped walnuts
Mix all dry ingredients together. Mix all wet ingredients together and then add to dry ingredients, finally add raisins, seeds and nuts.
Pour into a prepared loaf tin and bake at 170C for 40mins.
Once cool I cut into slices and keep in the freezer. Eat plain or spread with nut butter.
