Maca Coffee Baked Oatmeal

Serves 3
• 1 eggs
• 1tbsp olive oil
• 125ml coconut milk
• 50ml cold brewed coffee
• 70g apple puree
• 10g maple syrup or sweet freedom
• 100g Gluten free oats
• 30g chocolate protein powder or cacao powder
• Pinch of salt
• 1/2tsp baking powder
• 1/2tbsp maca powder
• 30g dairy free chocolate chips, optional

1. Preheat the oven to 180C, Gas mark 4.
2. Lightly grease an ovenproof rectangular dish with a little olive oil
3. In a large glass bowl mix together all the wet ingredients.
4. Add the remaining ingredients and beat well.
5. Pour the mixture into the dish and if wished scatter a few more chocolate chips.
6. Bake in the oven for 15-20 minutes until set and golden brown. You can either serve it immediately or leave to cool then cut into squares and serve. It can also be reheated in the microwave or oven if wished.
