Thai Chilli Lime Dressing

• 100ml lime juice
• 2tsp sugar
• Pinch of chilli flakes
• 1 garlic clove crushed
• 2tbsp Fish Sauce
• 1tbsp coriander chopped 
• 1tsp tamari soy sauce

1. Cut the tofu into chunks. Place in a bowl and coat with the cornflour.
2. Heat the oil in a sauté pan. When hot add the tofu and cook on each side until golden. Remove from the pan
3. Add the garlic, ginger, soy sauce, pepper, spring onion and kale and simmer briefly to soften veggies.
4. Cook rice or warm the precooked rice or quinoa.
5. Spoon rice into the bowls, add veggies and top with tofu and kimchi
