Spiced Poached Plums with Yogurt

Make this the day before for a simple breakfast option – it can be served hot or cold.

Serves 2
• 4 plums, pitted and chopped
• 2 star anise
• 150ml Red Grape Juice
• Pinch of ground cinnamon
• 200g soy yogurt or coconut yogurt
• 2tbsp mixed seeds and or nuts

1. Place the plums, spices and red grape juice in a small pan.
2. Bring to the boil then simmer very gently for 5 minutes.
3. Turn off the heat and allow the plums to soak in the liquid for 15 minutes.
4. Serve topped with the yogurt and seeds/ nuts.
