Vietnamese Turkey Wraps

Serves 2
Preparation time 10 minutes Cooking time: 8 minutes
• 200g turkey mince
• 1tbsp olive oil
• 1 small red onion, diced
• 1tbsp grated root ginger
• 1 red chilli, deseeded and diced
• handful of coriander leaves, chopped
• Little gem lettuce leaves, separated
• Handful of shredded kale
• 1/2 red pepper sliced
• Handful of beansprouts
• 2tbsp fish sauce
• Juice of 1 lime
• Juice of 1 lemon
• 1tbsp honey
• 1tbsp Tamari, soy sauce
• Thai Sweet Chilli Sauce to serve.

1. Heat the oil in a frying pan or wok and stir fry the turkey mince until it begins to turn light brown. Add the onion, ginger, chilli and stir for a further 2-3 minutes. Remove from the heat and Stir in the coriander leaves. Combine the fish sauce, lime and lemon juice, honey and tamari. Pour over the turkey and season to taste.
2. Spoon the mixture into lettuce leaves to serve and drizzle over a little sweet chilli if wished.
