Matcha Bites

You can store these in the fridge for 1 week.

Makes about 12
• 115g /4oz 1⁄2 cup cashew nut butter 
• 20g maple syrup
• 1tsp matcha green tea powder
• pinch of sea salt
• 2tbsp raw cacao powder
• 50g melted cacao butter or coconut oil  
• 1tbsp lemon juice
• zest of 1 lemon
• 30g chocolate protein powder or cacao powder
• 60g dried cherries
• To dust – matcha green tea powder, raw cacao powder, chopped nuts

1. Simply place all the ingredients in a food processor and process to form a soft dough.
2. Roll the dough into small walnut size balls then dust in a little matcha green tea powder or raw cacao powder
3. Store in the fridge.

 

Energy Bites:
2/3 cup dates
1/3 cup unsulphured apricots
1/2 cup pecans
1/2 cup cashews
1/3 cup unsweetened coconut flakes
1 tbsp raw cacao powder
1 tbsp water
1 tsp coconut oil
pinch of salt
2 tbsp hemp protein powder (optional)

1.Soak the dates, apricots and cashews in water for 1 hour. 
Drain and add to a blender with the rest of the ingredients. Blend until the ingredients are well combined and a dough is formed. Another tablespoon or two of water can be added if the mixture is too dry. 
Roll tablespoon sized amounts of dough into balls with your hands. Put them on a large plate or baking pan and refrigerate for 30 minutes.

You can be creative! Use different nuts, add in whole seeds, chopped nuts or dried fruit at the end, to create different textures. Flavour with cinnamon, nutmeg, vanilla, orange or lemon zest.

You can also roll finished balls in coconut, ground nuts (pistachos look pretty), cacoa powder, sesame seeds before chilling
