Easy Chickpea Salad


Serves 2
• 1 can chickpeas drained and rinsed
• 1tbsp lemon juice
• 1⁄2 red onion, diced
• Handful of cherry tomatoes cut into halves
• 1 carrot grated or sliced finely
• 1⁄2 avocado chopped
• Handful of black olives, rinsed
• 2tsp capers
• Large handful of baby spinach or rocket
• Olive oil for drizzling
• Salt and pepper
• Handful of fresh herbs (parsley, mint)
• Nutritional yeast flakes, optional

Simply mix all the ingredients together in a bowl and serve.
