Indian Spiced Onion Hummus

The addition of cumin and caramelised onion creates a sensational Indian spiced hummus. This is delicious as a snack or served alongside a salad for a light meal.
Preparation time: 10 minutes Cooking time 10 minutes Serves 4

• 1 tbsp olive oil 
• 1 small red onion, thinly sliced 
• 1tsp maple syrup
• 1 x 400g can chickpeas, rinsed and drained 
• 1tsp ground cumin 
• pinch of turmeric 
• 1 garlic clove, crushed 
• 1tsp sea salt 
• juice of 1⁄2 lemon 
• 2 tbsp tahini 

1. Heat the oil in a pan and sauté the onion with the maple syrup until soft and lightly browned, about 10 minutes. Remove from the heat and set aside to cool.
2. In a food processor, blitz together the chickpeas, lemon juice, tahini, spices, salt and the red onion until smooth.
3. Tip into a serving bowl and dress with a little olive oil.
