Turmeric Mango Chia Pudding

Serves 1
• 3 tbsp of chia seeds
• 150ml coconut milk
• 100g mango frozen or fresh
• Freshly grated turmeric or 1⁄2 tsp turmeric
• Optional – 1tsp baobab powder / lucuma powder
• Pinch of black pepper
• To top – coconut flakes or additional mango optional

Blend together the coconut milk, mango, turmeric, black pepper until smooth. Pour into a jug.
Add the chia seeds and stir well. Refrigerate for a minimum of 3 hours, even better overnight. Serve topped with a few coconut flakes.
