Overnight Oats with Berries

For an additional protein hit add in the protein powder and nut butter.

Serves 2
• 75g oats
• 250ml coconut milk or almond milk
• 2 tbsp ground almonds (or stir in vanilla protein powder)
• 1⁄2 tsp vanilla extract
• 1tsp tahini or nut butter
• To serve 200g mixed berries (fresh or frozen)
• 1tbsp mixed seeds
• Yogurt to serve – coconut yogurt, soy yogurt

1. Combine the oats, milk alternative, ground almonds (or protein powder), nut butter and vanilla in a small bowl. Stir well to combine.
2. Cover and allow to soak for a minimum of 2 hours, ideally overnight. Keep refrigerated.
3. In the morning top with berries, seeds and
yogurt to serve.
